Caviar
Caviar, one of the world's most luxurious delicacies, once symbolized exclusivity and extravagance in the West. Today, China produces 60 percent of the world's caviar, making this once-rare indulgence more widely accessible.
According to the Ministry of Agriculture and Rural Affairs, China is currently the world's largest producer of farm-raised sturgeon caviar, with exports reaching 275.83 tonnes in 2023. In Tianquan county of southwest China's Sichuan Province, one of China's leading production centers, annual output has increased by 40 tonnes over the past five years.
